Made from the flesh of ripe smooth Cayenne pineapple grown all year round in Ecuador on 20% green banana as carrier.

ORGANOLEPTIC DESCRIPTION:
The colour of the pineapple flakes is golden yellow. The reconstituted product made with one part of powder and five parts water has the colour, odour and flavour of pineapple.

PROCESSING :
Produced by ripening the pineapple, extracting, pulping, dosing the green banana carrier and sieving the mixture. Then drum drying it.

APPLICATION:
Confoco® pineapple flakes are ideal for dry fruit preparations, powdered drinks, cake mixes, etc. The flakes reconstituted 1:5 with water are used in the same traditional uses as crushed pineapple allowing for the presence of the starch carrier. Suitable for fruit preparations, nectars, drinks, cakes, muffins, pies, bread and some frozen desserts and soft food diets.

SHELF LIFE AND STORAGE:
Eighteen months, when stored at the recommended temperature (15-27°C/59-80°F) in the sealed original packaging.

:: PINEAPPLE ESSENCE CONFOCO®

Derived from the flesh of wilted fresh pineapple bananas of the species Cayena Lisa grown in Ecuador.

ORGANOLEPTIC DESCRIPTION:
Clear, colourless liquid with intense odour of  fresh pineapple.

PROCESSING :
Produced by condensation of volatile components of  freshly processed pineapple products. The density is aproximately that of water and no solvents, processing aids or preservatives have been added.  Trobana® Pineapple Essence is a pure water base natural material.

ACTIVE COMPONENTS:
Characteristic esters, aldehydes, ketones  and  other components  give strength and character to the pineapple essence.

SOLUBILITY:
Soluble in water, ethanol, propylene glycol; not soluble in vegetable oils.

STABILITY:
Twelve   months   when   stored   at refrigerator temperatures (44.6 – 80 °F / 7 – 27 °C) in absence of air and light in sealed containers.  When refrigerated, an organic layer may  separate.    Allow essence  to   reach room temperature  and  mix  thoroughly to  solubilize prior to use.  Do not freeze as this precipitates active ingredients irreversibly.

APPLICATIONS:
This product will produce a natural fresh pineapple effect comprising the green and other notes of pineapple, in applications where a water based aroma system is used to impart a pineapple flavour, especially in refrigerated and frozen products.
 
RECOMMENDED DOSAGE:

Start at 1% by weight and adjust up or down as desired.

ORGANOLEPTIC DESCRIPTION:
The colour, odour and flavor of the pineapple puree is typical of cooked pineapple.

PROCESSING:
Produced by hand peeling, pulping, blanching, sieving and deaerating the pulp. Then, aseptically processing and packaging in pre-sterilized bags at room temperature.

Pineapple 100 %.
